The tour in the Azienda Agricola Novaia, in the Marano Valley in Valpolicella Classica, begins with a walk on the estate, among vineyards, olive groves, spontaneous woods, to protect biodiversity and passage to the ancient water source of the '700, with underground pipeline , carved out of stone. During the tour the territory, the principles of ORGANIC cultivation, the indigenous vines, the delicate process of selection, collection and processing of the grapes in Valpolicella will be explained. The visit to Corte Vaona follows, with the historic cellar and the ancient barrel dug in the stone for the aging of wines; then the tasting of BIO, Classic DOC and DOCG wines: Valpolicella, Ripasso, Superiore, Amarone and Recioto and of the organic Extra Virgin Olive Oil. The wines are accompanied by a platter of local cheeses (cold cuts and local sweets on request).
