- After securing the saddlebags and adjusting the stirrups, we mount, crossing the border along the Thieves' Path, we will traverse the woods admiring the majestic Queen Beech before reaching the vast pastures, where time seems to have stopped, meadows stretching as far as the eye can see, monoliths emerging from the grass and this sensation of freedom that becomes truly powerful.
- At midday, a historic alpine hut welcomes us with the scent of melted mountain butter and the strong aroma of cheese. We loosen the girths, water the horses, and let them rest while a nice steaming plate of mountain gnocchi, a dish of salted meat, and platters of typical cold cuts and cheeses await us.
- The early afternoon reveals the truest and rawest soul of Lessinia. In the silence of the barn, next to the grazing cows, we witness the milking and the ancient gestures of milk processing. We understand what it means to live in symbiosis with nature: a job made of respect, schedules dictated by the sun, and a deep bond with the land and animals.
