The company, approximately 5 hectares in size, is located in the agricultural village of Sarcedo near ancient Venetian villas and extends between fields and orchards where maize, grass, vegetables are cultivated using traditional farming techniques, and pigs are raised.
The Pauletto family is fully dedicated to managing the business, particularly in pig farming and transforming pigs into delicious cured meats, porchetta, and raw ham. In the company, the cultivation of garden products also plays an important role, which, following simple transformations, arrive at the tables in the form of fresh produce or preserves. The colors of the appetizers and side dishes, always numerous to accompany the porchetta, always reflect the seasonality of the garden.
Barbara and her daughter Michela have managed to create a cuisine that is a meeting point of their experiences: on one side the culinary tradition of Veneto and on the other creative imagination, never compromising on genuine ingredients. To fully savor the flavors that characterize the cuisine of Agriturismo Dai Colombari, it is advisable to choose the tasting menu, which always sees the porchetta at the center of the scene but pairs dishes with seasonal products that offer the best of what nature gives, according to the “from farm to table” philosophy.
For your special occasions, it is also possible to arrange a personalized menu valid for the entire table. The rooms are divided into small and medium environments and can accommodate a maximum of 80 guests in total. The structure also offers the possibility of reserving the entire room.
