In the 1850s, when the ancient Palazzo Pretorio became the seat of the Chamber of Commerce, it underwent a radical restoration, after which, in 1854, the Caffè Borsa was established in the left wing.
In operation for many years, enough to earn the title of historic shop of the city, it is now managed by Borsari Maestri Pasticceri, a company active in the pastry sector since 1902. Taking inspiration from the best international venues, the place offers everything from breakfast to aperitifs, including light lunches and snack time, as well as a rich selection of fresh sweet and savory pastries, all produced in-house.
