The Trattoria Hesperia has been open in the city for over a decade. The location is enviable: it is situated in a quiet square in the heart of the city, and the outdoor terrace overlooks the Loggia dei Cavalieri.
Here, the cuisine is very much tied to Apulian tradition: every day we find fresh, handmade pasta, with fresh fish sauces, enriched with flavor from aromatic herbs and chili peppers.
The main courses are no less: proposals of fish and meat prepared simply to avoid altering the flavor.
The raw materials are of high quality and follow the seasonal availability. A generous drizzle of Apulian olive oil beautifully finishes the preparation of the dishes.
