There is a reason why the Brasserie is known as the Temple of Typical & Original Polesana Pizza: here, pizza is a sincere tribute to the Polesine, to the traditions and products of our land.
The foundation of everything is the Polesanissimo® dough created in the Polesanissimo Lab: only Polesana flours, local yeast, sea salt from the Delta, and as much as 48 hours of rest in the Meditation Room, where the dough relaxes in the dark. The result is light and digestible.
